Italian Style Summer Entertaining, £110, 20 April, 22 May, 22 June
Everything you will need for relaxed ‘al fresco’ dining this summer.
Students will prepare a menu perfect for that long lazy lunch in the
sun, or a candlelit supper party on the lawn.

Seafood (4 students), £115, 26 March, 28 March, 10 April, 25 April, 10 June, 10 July, 4 August
The course will concentrate on fresh fish; preparation, filleting and cooking. Plus shellfish and crustaceans; preparation and recipes for local crab, lobster, scallops, cockles, clams and mussels.

Italian Fish Cookery, £110, 28 August
This course will look specifically at the use of fish in Italian cookery. Techniques for fish preparation will be included, but the emphasis is on the regional seafood dishes.

Pizza & Italian Breads, £95, 21 March, 14 July, 23 September
This course will need some serious muscle with plenty of pizza and bread dough to be kneaded!
Sample menu: Pizza with Buffalo Mozzarella, Parma Ham & Rocket • Foccacia with Rosemary & Sea Salt • Black Olive Grissini • White Pizza with Artichoke Hearts & Creme Fraiche
Fresh Pasta, £95, 24 March, 25 September
Whether you’ve got a pasta machine gathering dust in the cupboard or have always wanted to produce beautiful silky tagliatelle, you will leave this course confident of your pasta making skills.

Vegetarian Summer Kitchen Garden, £95, 3 July
By early summer those kitchen gardens will be bearing fruit, vegetables and salad leaves......learn some new ways of serving up those delicious fresh ingredients, straight from garden to plate.

Risotto
Smoke & Spice, £110, 12 June
If it’s the barbeque you turn to when the sun comes out, this is the course for you. Combining the best local meat and seafood with fresh herbs, marinades and vegetables for a fabulously simple outdoor feast.

Sicilian Cooking, £100, 11 April, 8 July
Enjoy a day of cooking Sicilian style. Join Giuseppe in creating dishes taught to him by his mother and grandmother, exploring the delicate flavours and delicious ingredients of this beautiful mediterranean island.

Summer Preserving, Smoking & Salting, £100, 26 June
A day of preserving all that is delicious about the summer. Learn the Italian way to prepare your storecupboard for the winter.

Summer Puddings & Ice Cream Making, £85, 8 August
Students
will be hands on in the kitchen preparing an array of tempting summer
desserts, delicious summer ice creams and refreshing sorbets. Using the best fruits and flowers the season has to offer.

Cup Cake Workshop, £75, 19 July, 20 July, 10am-3pm
Guest tutor Lisa Notley (www.cakesbylisanotley.co.uk), will guide students through the most beautiful cake decorating techniques. Each student will leave with a box full of gorgeous cup cakes. Lunch is prepared on the day by Giuseppe.

Spring Intermediate Course, £260, 29, 30 & 31 March
This course assumes a basic knowledge of cooking and will cover more advanced skills such as classic pastries, warm salads and emulsion sauces. The focus of this course is to learn new ways of preparing and presenting seasonal produce.

Three Day Seafood Course, £320, 11, 12 & 13 March
This course has been designed for real seafood enthusiasts who would like to delve into the sea’s harvest in more detail. Students will spend one day looking at flat fish, one at round fish and one at lobster, crab and shellfish. Each day they will transform local, seasonal fish into a variety of dishes. Other skills incorporated too, such as pasta making.

For all those who love to picnic. Spend the morning preparing a gourmet picnic which you can then take away with you for lunch!

Storecupboard Survival, £60, 27 April
Need to rustle up lunch or supper from the storecupboard, Giuseppe will guide you through a well stocked store and how to make the most of what you have.

FOUR WEEK EVENING COURSE
From Zero to Hero, £180, every Wednesday evening, 6.30-8.30pm, 14, 21 & 28 April & 12 May
Designed for men who would love to venture into the kitchen but have yet to refine their culinary skills! Some knowledge of cooking useful but not essential, the pace of the course will be set according to the level and ability of the students involved. Each evening the students will prepare a main course and dessert for two, which they will then take home for supper.

Young Chefs Course, a one day course during the school holidays, £65, 10am - 3pm, 14 April, 19 August
Aimed at our budding chefs (aged 10 & over), this course will improve their skills & techniques, introduce them to the importance of seasonal food & inspire them to develop their culinary know-how even further.

PRE-UNIVERSITY COURSE, 5 days, 9.30am – 12.30pm daily followed by lunch, £350, 5-8 September
This course will equip young people with the basic skills for healthy, balanced and cost effective eating whilst away from home. Whether it’s poaching an egg or making a fresh pasta sauce, students will leave with a recipe folder full of straight forward yet delicious dishes.

Chef’s Table £75 per person (minimum 4, maximum 6)
